Fresh Guacamole

Guacamole

- 1 ripe avocado medium sized
- 1/8 teaspoon salt a "pinch"
- teaspoon pepper
- 1 teaspoon lemon or lime juice
- 1 tomato diced
- 2 Tablespoons onion diced
- Tortilla chips

- Peel and mash the avocado in a bowl with a fork
- Add rest of ingredients to thebowl and mix

Greek Salad

• ½ pound feta cheese • ½ cup pitted kalamata olives • 1 pint cherry tomatoes • 1 red bell pepper • 1 yellow pepper • 1 teaspoon dried oregano • ½ teaspoon dijon mustard • ¼ cup red wine vinegar • 1 teaspoon salt • ½ teaspoon black pepper • ½ cup olive oil • ½ pound feta cheese • ½ cup pitted kalamata olives • 1 pint cherry tomatoes • 1 red bell pepper • 1 yellow pepper •  1 teaspoon dried oregano • ½ teaspoon dijon mustard •  ¼ cup red wine vinegar • 1 teaspoon salt • ½ teaspoon black pepper • ½ cup olive oil


- Cut and place the cucumber, peppers, tomatoes and red onion in a large bowl.- For the vinaigrette, whisk together thegarlic, oregano, mustard, vinegar, saltand pepper in a small bowl. Still whisking, slowly add the oliveoil to make anemulsion. Pour thevinaigrette over thevegetables. Add thefeta and olives andtoss lightly. For thevinaigrette, whisktogether the garlic,oregano, mustard,vinegar, salt andpepper in a smallbowl. Still whisking,slowly add the oliveoil to make anemulsion. Mac & Cheese

  • 1 (8 ounce) box elbow macaroni

  • ¼ cup butter

  • ¼ cup all-purpose flour

  • ½ teaspoon salt

  • ground black pepper to taste

  • 2 cups milk

  • 2 cups shredded Cheddar cheese

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.

- Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.

- Fold macaroni into cheese sauce until coated.

Vanilla Ice Cream

Ice Cream in a Bag

• 1 cup half-and-half • 2 tbsp. granulated sugar • 1/2 tsp. pure vanilla extract •  3 cup ice •  1/3 cup kosher salt • Toppings of your choice

- In a small resealable plastic bag, combine half-and-half, sugar, and vanilla. Push out excess air and seal. - Into a large resealable plastic bag, combine ice and salt. Place small bag inside the bigger bag and shake vigorously, 7 to 10 minutes, until ice cream has hardened. - Remove from bag and enjoy with your favorite ice cream toppings.
